Muesli Muffins

About the Recipe

Tasty and not so sweet, this is a welcome afternoon pick-me-up with your favourite herbal tea. A lot of ingredients make this a wholesome treat. These muffins work well for breakfast too.

Ingredients

  • ⅔ cup brown rice flour

  • 1⅔ cup oat flour

  • 100g sugar-free muesli

  • 1 tbsp ground linseeds

  • ½ tsp xanthan gum

  • 2 tsp baking powder

  • 1 tsp ground cinnamon

  • 4 eggs

  • 4 tbsp light olive oil or melted coconut oil

  • 1 large ripe banana

  • ¼ cup xylitol

  • 1 tsp vanilla extract

  • ½ cup fresh or dried unsweetened berries (blueberries, cherries or cranberries)

  • Optional topping: 4 tbsp chopped pecans, 1 tsp ground cinnamon

Preparation

Step 1


Preheat the oven to 190°C and grease 8 large muffin moulds.


Step 2


Place the flours and muesli in a bowl with the linseeds, xanthan gum, baking powder and ground cinnamon.


Step 3


Place the eggs, oil, banana, xylitol and vanilla into a blender and process until smooth. Stir into the flour with the berries and mix thoroughly. Spoon the mixture into 8 large muffin moulds.


Step 4


For the topping, mix together the nuts and cinnamon and some xylitol if you prefer a little sweeter taste. Sprinkle over the muffins.


Step 5


Bake for 20–25 minutes until risen and golden brown.


Step 6


Allow to cool in the tin before removing.


Xylitol occurs naturally in small amounts in fruit and vegetables and is produced from birch bark. It has the added advantage of not causing tooth decay, unlike sugar. Very little insulin is used for its absorption, so it has minimal impact on blood sugar — a good alternative to sugar when trying to achieve stable blood sugar balance.
