Homemade Breakfast Granola

About the Recipe

With its divine smell as it is roasting, you can't go wrong with this delicious, crunchy, homemade granola.

Ingredients

  • 2 cups oats

  • 2 cups pecans

  • 1 cup almonds with skins

  • 1 cup pumpkin seeds

  • 1 cup sunflower seeds

  • ½ cup linseeds

  • 3 tsp ground cinnamon

  • ¾ cup dark, unsulphured, dried apricots, finely chopped

  • 3 tbsp coconut oil

  • 3 tbsp maple syrup

Preparation

Step 1

Preheat the oven to 180°C.


Step 2

Put the pecans and almonds in a food processor and blitz so that they are partially crushed. Tip them into a large mixing bowl with all the other dry ingredients except for the apricots.


Step 3

Melt the coconut oil and maple syrup together in a pan over a low heat until dissolved, then add to the dry mixture to create a slightly sticky mixture. Spoon onto a baking tray and bake for 15 minutes.


Step 4

Stir well, then lower the oven temperature to 160°C and continue to bake for a further 15 minutes until crunchy and golden brown, being careful that the ingredients do not burn.


Step 5

Remove from the oven and leave to cool. The granola will crisp up even more as it is cooling.


Step 6

Stir in the apricots.


Step 7

Once cooled, store in an airtight container.


Step 8

Top with fresh berries and almond milk (preferably homemade), or yogurt for breakfast.


Step 9

Eat a small handful for a nutritious snack.


Supporting blood sugar balance (due to the cinnamon) and a steady release of energy so you will feel fuller for longer, this granola is high in protein (nuts and seeds), calcium (almonds), fibre (oats and apricots) and healthy fats (coconut oil, nuts and seeds).
