About the Recipe
This provides an indulgent breakfast treat whilst being healthy at the same time. Very satiating and luxurious drizzled with maple syrup.

Ingredients
¼ cup coconut flour
3 large eggs
2 tbsp olive oil, plus extra for frying
2 tbsp maple syrup
1 tsp baking powder
1 tsp vanilla essence
Pinch of Himalayan salt
Preparation
Step 1
Whisk together the coconut flour, eggs, olive oil, maple syrup, baking powder, vanilla essence and salt in a medium-sized bowl until there is a smooth consistency.
Step 2
Warm a small frying pan to a medium heat and brush with a little olive oil.
Step 3
Pour 2 tbsp of the mixture into the pan, spreading it slightly. (It does not cover the whole pan.)
Step 4
Let it cook for 5 minutes until the bottom of the pancake is cooked, then flip it over and cook for a further 2 minutes until cooked through and fluffy.
Step 5
Repeat with the rest of the mixture.
Step 6
Serve with Greek yoghurt, a sprinkle of berries, chia jam (see recipe) and a drizzle of maple syrup.
