About the Recipe

Dark chocolate clusters packed with dried cranberries, apricots, oatcakes, almonds and pecans - a wholesome treat that's simple to make and impossible to resist.

Ingredients

  • 100g dark chocolate (e.g. Green & Blacks or other good quality chocolate)

  • 15g dried cranberries

  • 25g ready-to-eat apricots

  • 5 rough oatcakes

  • 2 tsp xylitol

  • 40g flaked almonds

  • 40g pecan nuts

Preparation

Step 1


Melt the chocolate in a glass bowl set in shallow water over a low heat until melted.


Step 2


Blend all the ingredients except for the flaked almonds in a blender until roughly chopped.


Step 3


Add the mixture with the flaked almonds to the melted chocolate and coat thoroughly.


Step 4


Spoon into 10–12 cake cases or 20 petit four cases.


Step 5


Chill in the fridge until set.


Dark chocolate (70%+ cocoa) is rich in antioxidant flavonoids, magnesium and iron. Almonds and pecans provide healthy fats, vitamin E and plant protein. Dried cranberries and apricots add natural sweetness and antioxidants. Xylitol keeps the sugar content low with minimal impact on blood sugar.
