Basic Chickpea Hummus

About the Recipe
This is a must. Once you have tasted your homemade hummus you will never want shop-bought again.

Ingredients
400g tin of chickpeas
½ cup water
1 tbsp tahini
½ tsp sea salt
Juice of 1 lemon
1 garlic clove, crushed (optional)
¼ tsp ground cumin (optional)
For the garnish: a drizzle olive oil, 2 tsp chopped parsley, 1 pinch paprika
Preparation
Step 1
Either drain and rinse the chickpeas and put them in a blender with the water, or for a stronger taste, just pour the chickpeas in their juice into the blender. Add the tahini, salt, lemon juice, garlic and cumin, if using.
Step 2
Blend the mixture until thick and smooth, adding a little more water if it is too thick. Adjust the seasoning to taste.
Step 3
Garnish with a little olive oil, parsley and paprika.
Chickpeas are such a versatile food and packed with protein and B vitamins. For variations, simply add a couple of slices of roasted red pepper to the mix, or some sundried tomatoes, for different flavours and added nutrients.
