About the Recipe

A tasty and easy-to-make, high-protein boost. Once cooked, this can also be blended into a purée and used as a pâté with chopped vegetables for a snack, or spread on toast with a side salad for a light lunch.

Ingredients

  • 400g tin of chickpeas, rinsed and drained

  • 1 handful parsley, chopped

  • 1 tbsp tomato purée

  • ½ tsp ground cumin

  • 1 pinch sea salt

  • Olive oil, to brush the pan

Preparation

Step 1


Brush a frying pan with a little oil over a medium heat, add the chickpeas and stir-fry for a couple of minutes.


Step 2


Add the other ingredients and stir-fry for a few more minutes until combined.


Step 3


Serve on toast with a leafy green salad.


Chickpeas are a type of legume with a nutty taste. High in protein, complex carbohydrates and fibre, they are also a good source of B vitamins, iron and folic acid.
