Breakfast Granola

Healthy Homemade Breakfast Granola

(Breakfast or Snack)

Difficulty to prepare: Easy

Servings: Large quantity


  • cup almonds1

  • 2 cups pecans

  • 2 cups oats (gluten free)

  • 1 cup pumpkin seeds

  • 1 cup sunflower seeds

  • ½ cup flaxseeds

  • 3 tablespoons maple syrup

  • 3 tablespoons coconut oil

  • 3 teaspoons ground cinnamon

  • 1 cup dark dried apricots (unsulphured)


​Preheat oven to 190ºC

Using a food processor pulse the pecans and almonds so that they are partially crushed. Add them to a large mixing bowl with all the other dry ingredients. (Except for the apricots and cinnamon).

Melt the coconut oil and maple syrup together until dissolved and add it to the dry mixture to create a slightly sticky mixture.

Place onto a baking tray and bake for 30-40 minutes until crunchy and golden brown. Stir half way through and be careful not to burn. Remove from oven and allow to cool. Stir in the apricots. Store in an airtight container. (This makes a large quantity).

Top with fresh berries and almond milk for breakfast or eat a small handful as a snack.
