Cashew & Sesame Quinoa

  • 140g quinoa

  • 1tbsp tamari (wheat-free soya sauce)

  • 2tsp lemon juice

  • 1 large carrot finely chopped or grated

  • Freshly ground pepper

  • 360ml water

  • 1tsp vegetable powder

  • 3-4tbsp fresh or frozen petit pois

  • 2tbsp cashew nuts

  • 2tbsp sesame oil


  • Add the quinoa, water and vegetable powder to a saucepan and bring to the boil.

  • Cover and simmer for around 13minutes, or until all the water has been absorbed and the quinoa grains are soft and fluffy.

  • Add the peas and stir through, then remove from the heat. They will cook or soften slightly in the residual warmth.

  • Combine with all the other ingredients, tossing thoroughly to mix all the flavours and allow the quinoa to absorb the liquid seasonings.
